Brier Creek Commons shopping center just got a lot sweeter with the addition of Royal Cheesecake & Varieties. Ken & Tamara, the duo behind RCV, have both been baking for over 15 years. Ken is culinary certified and Tamara is “grandma” certified and both pride themselves in making all desserts from scratch using fresh and local ingredients. In addition to the Brier Creek Pop-Up Bakery, the duo also caters, has cupcake decorating classes, cooking classes and more.
This Thursday, I attended a media event to sample Royal Cheesecake & Varieties fall & holiday menus. Some of the creative confections include the The Death by Coconut Cupcake, made with Durham Pour Taproom’s Coconut Porter. All of Ken & Tamara’s cheesecake varieties are delicious and have a beautiful silky texture, but if you want to surprise your palate or your guests this Thanksgiving, I recommend the Chicken & Waffle Cheesecake. The cheesecake is made with a brown sugar pecan crust, topped with waffle bites and finished with a caramel chicken au jus syrup drizzle.
If you are looking for a traditional dessert, RCV’s Peach Cobbler is a phenomenal option. I am not a fan of baked peaches, but Tamara converted me to a big fan with her Peach Cobbler, a recipe inspired by her grandmother. There was so much comfort in one bowl of this Peach Cobbler that a scoop of vanilla ice cream was not needed!
Some of the RCV holiday items include Sugar Cookies and a White Chocolate Peppermint Cheesecake – two desserts that were favorites at last night’s media event. Thanksgiving specials include sweet potato pie, sweet potato cheesecake, pumpkin cheesecake, classic cheesecake and variety of pound cakes (lemon, pumpkin, sweet potato & plain). Make sure to order yours in advance!
In addition to the fall & holiday desserts, Royal Cheesecake & Varieties classic menu items include my favorite, the Red Velvet Cheesecake Cake. A traditional cheesecake is nestled between two layers of red velvet cake – pure bliss. Some other classic items include carrot cake, confetti cake, pink velvet cake and an assortment of cheesecakes like turtle, strawberry, cherry and mocha – just to name a few.
If you have the opportunity to meet Ken & Tamara, you will find they are two of the sweetest duo’s around – no pun intended. Selfishly, I am so excited about their new location because it is a hop, skip and a jump from Morrisville. Royal Cheesecake & Varieties is located at 8411 Brier Creek Pkwy Ste. 103, Raleigh, NC 27617. Follow RCV at @rcvcakes on Instagram and Twitter for specials and events such as the Chicken & Waffle Scavenger Hunt, Date Night in The Bakery, Cupcake Decorating Class and more.

Hi Susan! Thanks for the comment, but I did not bake these pastries. This blog is about Royal Cheesecake & Varieties, a bakery that has a pop-up in Brier Creek in Raleigh.

I’m intrigued by the chicken and waffles cheesecake! I’ve never heard of anyone turning that into a dessert, but I’ll have to go by their pop-up sometime and try it out.
